Summertime Macaroni Salad

Posted by on May 24, 2016 in A HAPPY HOME, Blog, Celebrate the Family Table | 0 comments

Here we are at this wonderful time of the year again! School is out for most of us or it’s about to be. The days are longer, warmer, and those outside activities are calling us. We spend a lot of our time outside at those spring and summer sports or just enjoying the outside area of our home. This time of year calls for lighter, more refreshing foods. For some of us, fresh produce is coming to our local farmer’s markets and we are anxious to include those items in our mealtime fare. I love to be in the kitchen, but at this time of year we are looking for more make-ahead foods to enjoy as we spend time outdoors. I have a macaroni salad that meets the criteria for make-ahead, lighter, and fresher. It’s also a great dish...

Strawberry Pie

One of my favorite things about this time of year are the fresh strawberries we get in our area. We live very close to Louisiana. As we all know, the area has a reputation for its good Cajun and creole foods, but Louisiana is also known for its strawberries. They even have a weekend festival every year in April to celebrate this delicious fruit—and you can find just about anything made with strawberries. Of course, I take advantage of their freshness this time of year. I put them in my salads and cereal. I make sauces with them and, fix desserts—and one of my favorite ones to make is a fresh strawberry pie. I use a recipe that my brother passed on to me from a restaurant that was famous for their strawberry pie. It is one of my...

Spring time! Does your family love it? Spring is a beautiful time of year when the dead comes to life. All those bare trees, dead plants, and brown grass begin to come alive. The colors of bright green burst through in the leaves of the trees and the grass. The flowers bloom with beautiful colors. With the time change, our days are longer and brighter with cheery sunshine. We also seem to have a brighter spirit with the colors and sounds of spring. It’s a wonderful time to celebrate a risen Lord and to spend time with family. I have two fun actives to add color and brightness to your Easter table. Colored eggs are a traditional addition to our Easter celebrations. The recipes I am sharing with you are simple and child-friendly, and will include them in the...

Hearty Chicken Noodle Soup

Posted by on Feb 8, 2016 in A HAPPY HOME, Blog, Celebrate the Family Table | 0 comments

The holidays are behind us and it’s time to get back to a routine and slow down from the busy activities that we all enjoy during the holidays. I don’t know about you, but I welcome the down-time after they are all over. It’s such a great time to spend with family in a slower pace. When the weather is really cold and we’re staying in more, I love making and serving soup. Many soups can be made in crockpots, simmered on the stove, or even made ahead and reheated.  Most soups just get better when cooked a day ahead so you can let their flavors develop, and they’re a great way to use leftover meats and vegetables. We are a family that loves our soup! I have a recipe for a Chicken Noodle Soup that has become one...

Peanut Butter Fudge and Cookie Bites

Merry Christmas! The song says that it is the most wonderful time of year. It’s a time when our hearts seem to be a little lighter and joy and laughter fill the air. We get together with family and friends to celebrate this season and usually it involves food. Of course, at my house the food and the preparation of it is a big celebration in itself.  It has been since I was a child helping my mother and grandmothers in the kitchen, and it continues to be with my children and now my grandchild. As I always share, time in the kitchen with your family and with children is more than just about the food. It’s a time to laugh, share, and make memories that will last a lifetime. I always like to make goodies to share and...

The Holidays are upon us. What does this mean to you? Things are about to become busy. On top of our usual daily demands and activities we add the holidays and all the work that comes with them. I love this time of year and the special celebrations with friends and family that come with it. I look forward to the time in the kitchen preparing special meals and goodies and the time spent doing this with family. We do have to be careful not to overload ourselves to where we don’t enjoy these times and that they become a burden. How do you want your family to see you during the holiday season—stressed out or full of joy as you accomplish your tasks? I love that Jesus tells us “Come to me, all you who are weary and...
