Fun Days Menu

Fun days and fun food.  Don’t you just love to have a day with your children or grandchildren just to have fun, be silly, play games, or watch funny movies? I used to love to sneak and stand by the door of my children’s rooms to hear them playing—to hear their laughter and the joy in their voices. Today as a grandmother I love to do the same things with my grandsons.  My 7-year-old is so funny. I love hearing his jokes that he thinks are so hilarious, but they don’t make any sense. I still laugh. He does some of the funniest tricks in the pool and we play like we’re fish. We hear that “laughter is the best medicine” and I know this is true.  Of course to go along with these days we need fun food....

School is out and summer is here, so let the fun begin! I grew up in the time period when most moms did not work outside the home and we spent summers with them at home, but it was not a lazy summer. My grandfather had a big farm, so there was a lot to do when the crops came in. We worked, shelling beans and peas, shucking corn, and picking all kinds of berries and fruits for jams and jellies, but as I look back, those were some of the happiest times of my life. We spent time together talking, sharing laughter, and hearing stories from times past. We had cousins who came to spend the summer to help work the garden, and we so looked forward to their visits. Yes, we did work, but we also had...

Fix Mom Some Chicken Salad

Children are such a marvelous gift from God. I’m so thankful for my children, and now the blessing of grandchildren. As all of us moms know, children can sometimes be a challenge. We have our ups and downs as we raise them. But I often think what a blessing God has given us to have the opportunity to pour into our children. I love the “Just 18 Summers” message. When you look at raising your children as having them for just 18 summers, it really puts things into perspective. So for you young moms, make those memories and use them as teaching moments. For you grandparents like me, enjoy making memories with your grandchildren and use that wealth of knowledge that came from raising your own children. Proverbs 22:6(NLT) says, “Direct your children onto the right path, and when...

Crispy Rice Easter Treats

Spring is here and all the changes that come with it. We see all the bright, new colors, hear the sounds of birds singing, and feel the warmth of the sun. After the winter, it is such a welcomed change! With the arrival of spring, comes Easter and the celebration of our risen Lord. Easter brings special activities and services in our churches. We also have Easter Egg Hunts for the children in our communities and usually following the Easter Sunday meal. I have a treat to add to your Easter table. It’s a great snack to involve your children in preparing. So simple and so cute! The recipe starts with an all time favorite and then adds a few decorations to complete these festive treats. Memories and traditions are such a big part of holidays. Keeping them simple...

Fun Cake Squares

February is a special month. As all of us know, it’s the month of love (Valentine’s Day), and for those of us in Louisiana, it’s Mardi Gras! My family has lots of activities going on this month, including parades. We attend the parades that are family oriented, and my grandchildren get enough beads and “stuff” to share with many others. These two February events include food. I love to prepare traditional dishes and theme foods. Making special memories with our families adds that special touch, so make sure you include your children. Allow them to help plan, decorate, and prepare the food. My family tells me I find a way to celebrate anything, but isn’t that what makes life special (celebrating the big events and the daily ones as well)? Doing things together as a family makes everything special...

Lasagna Roll-Ups

Posted by on Jan 26, 2017 in A HAPPY HOME, Blog, Celebrate the Family Table | 0 comments

With the holidays behind us, most of us are getting back to our normal routines—but even then it’s hard to just slow down and embrace the moments. We forget that the ordinary days are important and a great time to make memories.  Even though our day to day lives can be busy, January isn’t usually filled with activities, so it’s a perfect time to plan some family moments. I have a recipe for you today that is perfect for a family night: Lasagna Roll-ups. This is a great recipe with a twist—and it freezes well. When I make this, I like to make my sauce either the day before or put it in the Crockpot. Then it’s time to assemble everything—and this is the part where the kids can help by rolling up the noodles and/or helping to spread...
